Also called Steuben Yellow Eye Bean or Dot-Eye bean, are ivory-colored bean with a mustard yellow splotch at its inner seam. When cooked, holds its shape and maintains its markings, and have a mildly sweet, creamy, earthy flavor and provide a mealy-textured bean. Perfect for baked beans, or added to pasta, salads, soups, casseroles, stews, mixed vegetables.
Basic preparation: Wash, rise & soak overnight. Add 3 Cups of water / Cup of Bean, bring to boil. Reduce heat and simmer covered for 60-90 minutes or until tender (add more water as needed).
