Excellent for thickening and stabilizing sauces and also works great for films. Cold water swelling without the use of heat.
Has moderate tolerance to heating and acidic conditions. Works for both frozen and baked goods. Has excellent textural stability, provide a firmer texture, even in cold temperature or refrigerated storage conditions.
