These dried ‘Pasilla de Oaxaca’ chiles are fully ripen dark medium hot Red chilies grown in the hilly Oaxaca region of southern Mexico.
Chilies are harvested, partially dried and lightly smoked , then dried until it gets sharp, strong smoky character, wonderful sweet aroma, and a pungent fruity flavor. This chilies are significantly hotter than traditional Pasilla.
Simply drop one into the pot and remove it before serving to imparts a rich smoky flavor. Traditionally used in Oaxacan moles, Latin-style bean dishes, vegetable dishes, salsas, sauces and soups.
