New Mexico chilies are ripened red Anaheim peppers that grows all over New Mexico and dried. New Mexican chili resemble the California chili, only they are more flavorful and hotter. Ground chilies are lightly pungent, mild with a subtly sweet, fruity, earthy, and acidic flavor.
The chilis are typically added into sauces, marinades, and salsas, or they can be simmered into soups and stews. Also can be blended with other spices, use as a dry rub over meats for added flavor or sprinkling it into baked goods.
