Pectic enzyme powder contains Pectinase in a Maltodextrine carrier.
It breaks down the pectin's (cell walls in fruit), improve extraction of flavors and increasing juice yield & prevents pectin haze.
Used to treat wine must prior to fermentation.
Add up to ½ tsp per gallon of juice or 1/10th /lb fruit one hour before fermentation.
Typical usage rate is 1/2 tsp per gallon
