Sodium Benzoate is the sodium salt of benzoic acid. It is bacteriostatic and fungistatic under acidic conditions. Sodium benzoate combines with water to produce benzoic acid, an active form of the preservative.
Commonly added to acidic foods to enhance their flavor, balance pH level, kill bacterial yeast and fungi.
It is most widely used in acidic foods such as salad dressings, sauces, jams and fruit juices, pickles and condiments.
Usage: 0.1% of a product by weight.
