Ginger leaves are harvested when the ginger rhizomes are still young and dried, have mildly peppery flavor, and are less pungent than root. Leaves have high levels of antioxidants and are effective against indigestion, gas, motion sickness and also alleviate arthritic and rheumatic pain.*
Ginger leaves are used to infuse mildly herbal citrus flavor to dessert, soups, stews, and curries. Also leaves can be boiled and made into a mild and delicious tea. To make tea use 1-2gm per cup of boiling water, steep for 5-10 minutes, strain and enjoy it with a wedge of lemon and a teaspoon of honey.
