These mushrooms are edible ruffle-edged, thin
black mushroom grow on dead hardwood all
over the world. They very similar in appearance,
texture and taste to wood ear mushrooms, but
smaller in size, firm, smooth, puffy texture and
delicate, and slightly more mild in flavor.
Cloud ears is great in softer or smoother dishes
where a textural contrast is desired. Wonderful
in stir-fries or salads, or added to stuffings.
place desired amount into a bowl covered with
boiling water, soak for 15 to 20 min. Rinse well,
or add directly to recipe that will cook for
at least 25 minutes.
