Oyster Mushrooms have mild flavor, tender
texture and graceful seashell-like shape, grow
wild in deciduous hardwood forests cascading
in shelf-like clusters along the higher reaches
of dead and living trees, especially beech.
Reconstitute: Rinse throughly and soak in
boiling water for 15-20 min, agitating
occasionally, drain and rinse. Or, rinse and
add directly to any recipe that will cook for at
least 25 minutes. Oyster is a great mushroom
to flavor light cream sauces for chicken and
fish, or to add to fish chowders and light cream
soups. This is an ideal mushroom for Asian
stir-fries, as they cook very quickly.
