These finely diced Shiitake mushroom
(Lentinula edodes) are from edible wood-
dwelling fungus, native to East Asia. Cultivated
shiitake mushrooms are harvested, cleaned,
sliced and dried before being further chopped
into a fine dice. They are convenient way to use
this popular, umami-rich mushroom, which has
a meaty flesh and a full-bodied, earthy flavor.
To rehydrate : Put desired amount in a bowl,
and cover with boiling water, soak for 6-9
min. or until tender.
