Isomalt, in tiny-pellets form is an edible sugar alcohol made from glucose, mannitol, and sorbitol, instead of real sugar.
Isomalt can be poured, pulled, blown, and pushed to create sugar sculptures, cake decorations, sugar-free candy.
Isomalt comes in clear granules but the crystals that can be colored. It can be remelted and reused for new creations.
It has higher resistance to crystallization and humidity and stays colorless up to 400 ℉.
