Sample recipe to Prepare Armenian ‘BASTERMA’
Add 3tbsp Armenian Spice Mix to 3-4 Crushed Garlic Cloves, 1/2tsp salt, 2tbsp Tomato Paste, then Add Extra Virgin Olive Oil or Plain Yogurt to make a thick creamy sauce. Soak a tender cut beef ( 8x1/2 inch)thick, allow to marinade 2 weeks, Hang in airy place for 2 more weeks, May be used immediately, refrigerated, or frozen. This thick creamy sauce can used to marinade lamb or chicken before grilling or roasting. For vegetable dishes or casseroles add this sauce and cook on the stove top till done.
