Sample recipe for cooking ‘Afgani Meat Pilau’
with Char Masala
Heat 6tbsp veg oil in a pan and fry 2 chopped onions until golden brown, add 2lbs lamb or chicken pcs, fry until the meat is browned. Add 1 cup water, 1tsp ‘Char Masala’, salt and black pepper to taste, bring to a boil. Turn down the heat, stir well, and simmer until the meat is tender.
Boil 5 cups of water with 1tsp salt, put 2½ cups presoaked Basmati rice in the boiling water. Parboil it for 2 to 3 minutes, then drain and transfer to a large casserole with a tightly fitting lid. Add the 1lb cooked spinach, the cooked meat including the meat juices and 1tsp “Char Masala’, Mix gently. Place the hot green chilies on top of the rice, cover and put in a preheated oven at 300°F for about 45 minutes. To serve, mound the rice and meat on a large serving platter. Garnish with the chilies.
