Dhansak is one of their much-loved and popular Parsi dish, made with lentils & vegetables, chicken or lamb. Dhansak Masala is mildly spicy, pleasantly sweet & classic aromatic spice blend has its origins in Parsi cooking and may also be called ‘Parsi Garam Masala’. Ingredients: Kashmiri Chili Powder, Coriander, Cumin, Black peppercorn, Fenugreek, Cardamom, Mustard Seed, Turmeric, Mace, Cinnamon, Bay leaf, Clove.
Recipe for mutton Dhansak: Clean & soak ¼ cup toovar dal and ¼ cup masoor dal for 30 min. Heat ¼ cup ghee/ oil in a pan, add 2 sliced onions, 1 inch chopped ginger and 5-6pcs chopped garlic cloves and sauté (3-5 min). Add 1lb mutton pieces, sauté till lightly browned. Add 2 green chillies, 2 tbsp Dhansak masala and mix. Add the soaked dal, few pcs of vegetables (pumpkin, brinjal and potato), salt to taste and 3 cups of water. Bring to boil, cook for 8-10 minutes. Add ½ cup chopped methy leaves, ½ cup chopped mint leaves, 2 chopped tomatoes and cook until the meat is tender (30-40 min). Sprinkle coriander leaves and cook for a further five minutes and serve warm.
