This fragrant and lightly spiced mix is used to make Saudi Rice & Chicken dish called ‘Al- Kabsa or Al-Kabsah’). Also the dish can be made with goat, lamb, camel, beef, fish or shrimp. Kabsa spice mix also used as a rub for chicken, fish or lamb before grilling.
Recipe to make Saudi Chicken & rice dish In a casserole dish, heat 2tbsp oil, add 2 med size chopped onion and 2tsp chopped garlic, sauté for 3-5 min., add 2lbs chicken pieces, cook for five min. add 1lb soaked and rinsed basmati rice, sauté for at least 3mins,,add 2tbsp ‘Kabsa Spice Mix’, and 1 pc diced tomato,1/2 tsp salt(or to taste). add enough water to cover the chicken & rice mix, Stir, Bring to boil, lower heat, simmer for 15-20 min, remove from heat, stir in some blanched almonds and sultanas (opt), cover and let stand for 10 min., Then serve hot with , fresh salad of mixed cucumber, carrot, lettuce, tomato and chopped fresh coriander, and with a hot sauce called 'Shattah'
