Chakki atta is made by slowly stone grinding semi-hard wheat in a chakki (Flour mill or grinder, traditionally from stone), a process that Imparts a characteristic aroma and taste to the bread, and help make healthy, soft & delicious Indian bread.
Hard wheat have a high content of gluten (a protein composite that gives elasticity), and doughs made out of atta flour are strong and can be rolled out very thin, most South Asian flatbreads.
