ANNATTO (ACHIOTE) PASTE
(BIXA ORELLANA)
Also known as ‘Recado rojo, Achiote en Pasta ’
Annatto (Achiote) paste is a popular South and Central American spice blend, consisting of
annatto seed ( fruit-seed of the evergreen Achiote (Bixa orellana) tree) imparts a deep
red hue to meat, rice and vegetables. Also imparts a vinegary flavor and slight peppery
taste (not too strong), and it has vitamin C, iron and proteins.
Ingredients: Vinegar, annatto seed, spices, salt, garlic.
Suggested Uses:
nto a small bowl, break up 1tbsp achiote paste, mash with a fork, dilute with 1/2 cup
vinegar or sour lime /orange juice. Use it for rubbing on chicken, meat and
seafood or adding to soups, rice dishes or to mole sauce. Also used to color margarine, cheese, microwave popcorn, and other yellow or orange foodstuffs.
