Annatto seed powder are the ground seed grow inside the fruits of the evergreen Achiote (Bixa orellana) tree that grows in the tropical regions in South and Central America.
Annatto seed powder impart a bright yellow to deep orange-red color to foods and condiments, due to compounds called carotenoids.
Also imparts a subtle earthy, nutty-sweet, peppery, even smoky taste in dishes.
Annatto seed powders are usually toasted in oil or butter prior to adding to recipes.
Suggested Uses:
Annatto powder add color and mild flavor in Soup, Stews, Meats and in Mexican
Caribbean, and Latin American Recipes. Often used as a wet rub for meat or fish.
Also used as a dye for cloth, painting the body and medicinal purposes .
To make Annatto paste: combined with water, lemon juice or vinegar.
To make Annatto oil: Heat a cup of cooking oil and add 2oz annatto powder, mix until
the oil has turned an orange color. Strain the seeds out of the oil and refrigerate.
