This nutritious mixed lentil is an obvious choice for winter and autumn soups, stews or for a quick & healthy salad, or a side dish. When cooked it has a mild, earthly flavor and soft texture.
Rinse, soak overnight & drain. Add 4 cups of water/cup lentil mix, bring to boil. Simmer on low heat for 40-45 minutes or until soft & tender (add more water as needed). Whisk lightly, remove the floating foam. Flavor with butter or oil, salt to taste or seasoning if desired. Cook uncovered over low heat until desired consistency. Serve warm.
1 cup dry yields 2 ½ cup cooked dal.
