Ayam Spice Mix
Garlic, Onion, Turmeric, Sea Salt, Fried Shallots, Cinnamon, Black Peppercorn, Fenugreek Seed, Cumin, Fennel Seed, Chinese Chile, Coriander, Ginger, and Bay Leaf.
The chicken pieces are soaked and marinated in spice mixture for some time, then boiled for 15 minutes prior to frying. ‘Ayam goreng’ is usually served with steamed rice or coconut rice, sambal terasi, peanut sauces and garnish with cucumber, tomato, pineapple or your favorite tropical fruit.
Suggested usage: 2 tablespoons / kg chicken pieces.
