Baby butter bean is dwarf variety of the Lima Bean, has a thin, yellowish-white skin. When cooked, it cooks quickly and has mild flavor and butter like creamy texture. Ideal choice for savory dishes, in casseroles, vegetable soups, salads, or with rice and grain dishes.
Basic preparation: Wash, rinse & soak overnight. Add 4 Cups of water / Cup of Bean, bring to boil. Reduce heat and simmer covered for 50-60 minutes or until tender (add more water as needed). Whisk lightly to remove the floating foam while cooking.
Yield: 3 cups of cooked beans / Cup of dry beans.
