Ethiopian Seasoning Mix
‘Berbere’ is a chili-based spice blend serves as a signature seasoning in the cuisines of Ethiopia and Eritrea.
‘Berbere’ is used as a dry rub to enhance the flavor of meats and vegetables in roasting & grilling. It adds earthy texture, wonderful flavor and a zesty hot flavor to stews, stir-fries & sauces
Ingredients:
Paprika, Spices (Including: Ginger, Cayenne Pepper, Fenugreek, Cardamom, Coriander, Nutmeg, Cloves, Cinnamon, Allspice), Salt, Dehydrated Onion, Dehydrated Garlic.
To Make ‘Berbere Sauce’ for Ethiopian Dishes:
Fry a finely chopped onion in 1tbsp oil, with1tsp of mild paprika and 3tbsp of the dry ‘Berbere spice mixture. Fry for five minutes and either use immediately or allow to cool and refrigerate for up to two weeks for later use.
Recipe for Ethiopean Spiced Butter (Niter Kebbeh):
In a large sauté pan mix in ½ cup unsalted butter, 4 garlic cloves, halved, 3-inch piece ginger, peeled and sliced, 1 jalapeño, halved, , 1tbsp ‘Berbere’ spice mix , cook over low heat for 15 minutes, remove from heat and set aside.
