Biryani, a mouthwatering Mughal Dish, is a classic Northern-Indian dish, prepared during festivities and celebratory occasions. In preparing Biryani dish, Basmati rice is flavored and layered with lamb, chicken, fish, or vegetables cooked with this exotic spice blend in a thick gravy. Sample Recipe for Cooking Biryani:
Wash & rinse 14oz Basmati rice, cook in boiling water till 75% tender, drain water & keep rice aside. Marinade 1.5lbs Meat Pieces with 1tbsp ginger & garlic paste, 1 tsp lemon juice, for an hour. In a heated pan add 3-4tbsp cooking oil, 2 cups diced tomato, cook 5 min over medium heat, then add 2-3tbsp Biryani Masala, 1/2 cup Water and 1 cup yogurt, stir, simmer for 10 min, add marinated meat and salt to taste, simmer until meat is tender. Spread the cooked rice & 1 cup fried onion over the Coked Meat, cook on low heat until rice is tender. Mix rice & meat, garnish with sliced lime & fried onion, serve hot.
