Also known as ‘Bengal Gram’ or 'Desi Chana', is a type of chickpea but smaller with dark brown skin and a rough coat, yellow underneath.It has a particular savory flavor, slightly nuttier, starchy texture. When cooked, usually retain the shape. Used in a salad, combine with fresh herbs & seasonings or braising them in tangy sauces.
Basic preparation: Wash, rinse & soak overnight until grow plump. Add 4 Cups of water / Cup of Bean, bring to boil. Reduce heat and simmer covered for 60-90 minutes or until tender (add more water as needed).
