Mexican Yellow Bean
Mayocoba beans (Peruano Bean) are medium-sized, oval-shaped and pale yellow beans, has thin skin and when cooked, has mild flavor, creamy texture and rich buttery flavor. Known to have less of a gas-producing effect. Used for salads gives light yellow color, a hearty addition to casseroles and soups.
Basic preparation: Wash, rinse & soak overnight. Add 4 Cups of water / Cup of Bean, bring to boil. Reduce heat and simmer covered for 45 minutes or until tender (add more water as needed).
Yield: 2 1/2 cups of cooked beans / Cup of dry beans
