Black Cardamom seed pods grows in the Himalayan region of Nepal, India and Bhutan. Pods are dark brown to black in color, and have a tough, dried, wrinkly skin. It has a pungent aroma with a note of resin and camphor-like flavor and a distinct smoky character.
Black cardamom powder can be used in spice blends, curries, soups or savory dishes for a rich, earthy, unique smoky flavor.
Uses:
Black cardamom enhances and intensifies the flavors of the other ingredients in savory dishes. Mostly used in Indian curries, stews, lentil or pilaf dishes, or marinades Also used in Asian stir fries, braised meat dishes or noodle soups.
Rarely used in any sweet dishes.
