White cardamom pods are bleached Green Cardamom Pods, to degrade the green outer
husk color and get uniform pale whitish color. Swedish first developed a liking for this pale
colored pods, then it was commonly desired in Scandinavian and Northern European
region, for recipes that benefit from being uniformly white color.
Plumper in shape and less fragrant and flavorful than the green cardamom.
USES:
Mostly used in baking and some desserts because its white color helps keep light
colored batters, custard/ice cream, breads, cakes, sweets, sauces, and confections.
