Also known as 'Sparassis', a genus of mushrooms,
characterised by its unique shape similar to a sea
sponge or a head of cauliflower and grow to be
quite large. Outer surface is smooth, creamy
and soft texture. They have a spicy or fragrant
odor has deep, earthy aroma with mild fennel
and almond flavor notes. It’s specific, gelatinous
texture, make it good additions to soups, stews
or Japanese hot pot preperation. Sauté with
herbs, and serve with fish or poultry
To rehydrate: Thoroughly clean, rinse, cover
with additional water, soak until the mushroom
is completely soft (30 min.). Trim off parts near
stem and discard. Rinse thoroughly and gently
squeeze out excess water, then drain to dry.
