This South African seasoning blend is to prepare, 'Chakalaka- a South African most beloved staple food for generations. This is a traditional South African vegetable relish, a spicy dish and known for its warm, earthy, and complex flavor.
Chakalaka is prepared with tomatoes, carrots, onions, garlic, red hot chili pepper, white beans, cauliflower or white cabbage and traditionally served with bread, stews or curries.
Ingredients:
Peri peri chili, oregano, cumin, garlic, coriander, turmeric, fenugreek, fennel, mustard.
Warm ½ cup oil in a cooking pot, add 1 large, diced onion, 2 red or green bell pepper diced, stir fry until soft. Add 4 large carrots peeled and grated, 6 large tomatoes diced, 2 cup cabbage, 2 green chilies diced & ½ inch grated ginger, cook until golden brown. Add 16oz of baked beans or white cooked white cannellini beans, sprinkle 4 tsp of ‘Chakalaka spice mix’ into it, stir and cook covered for 15 min on medium heat. Use freshly chopped coriander to garnish.
