CHAROLI NUT
(Buchanania cochinchinensis)
AKA "chironji seeds , cuddapah almond or almondettes"
Charoli / Chironji are tiny stubby nuts inside the hard seed shell of Buchanania lanzan tree,
cultivated across India. It has sweet & nutty flavor similar to Almond or Pistachios. When heated, the flavor intensifies.
Can be eaten as a nut, raw and or toasted.
Suggested Uses:
Used in Indian cooking as toppings for sweets, usually in kheers, payasams and kulfis,
or to garnish for halwa, cakes and cream sauces.
The seeds are crushed and powdered for thickening savory sauces and flavoring
batters and stews for a rich & creamy texture.
