Red cornmeal is coarsely stone ground red corn kernels. Red Corn contains 20% more protein than white or yellow corn. It has a sweet, intense flavor and a hearty, fine texture, ideal for cornbread, porridge, stuffing,hot cereal, or as a breading for poultry and fish, red pancakes, waffles and even cookies.
It works also blended with other cornmeal for baking.
Substitute red Cornmeal for 1/3 of the wheat flour. Sift cornmeal before adding to recipes, to remove any clumps & make mixing easier and a smoother batter.
