Couscous Spice mix
Couscous spice mix is authentic and carefully blended to prepare nicely flavored Couscous dish. Couscous is the tiny golden pellets made of semolina grain flour, and is a staple food throughout the North African cuisines.
Usage:
Use approximately 2-3 tsp couscous spice mix per pound of couscous
Ingredients:
Cumin, Coriander, Ginger, Cayenne pepper, Black pepper, Orange peel powder, Garlic, Turmeric, Allspice, Parsley, Onion.
Simple recipe for couscous dish:
Heat 1/2 tbsp olive oil in a sauce pot over medium heat.
Add 1 cup Israeli couscous and toast for about 3 minutes, stirring occasionally. Stir in 2tsp ‘couscous spice mix’, toast until spices are fragrant and couscous is lightly browned.
Add 1 1/4 cup chicken or vegetable stock or water, bring to a boil.
Cover and turn the heat to low, cooking for 8-10 minutes, until liquid dry out and couscous is tender.
Lightly fluff the couscous with a fork. Season with salt and pepper. Toss well and adjust seasoning to taste.
