The curry powder were introduced to Jamaicans since the Indian migrants came in the 1830s. Since then the curry concept has deeply infused to Jamaican food & culture, and often used on meats, seafood, and vegetables.
In a large skillet heat 4-5tbsp cooking oil over medium heat, add 3-4tbsp ‘JAMAICAN CURRY POWDER’, stir, add 2lbs Goat/ Lamb or Beef (cut into pieces), stir & cook for 20-30min, until brown, keep the meat aside in a bowl. In the same skillet add 2 chopped onion, cook until soft, add 4 cloves of minced garlic, 1tsp chopped ginger, stir. Add the browned meat, mix well. Add 1 large chopped tomato, stir and cook for 15-20 minutes, add 1 cup coconut milk, fresh juice of 1 pc lime, salt to taste & 1 cup water, bring to boil, cover, simmer on low heat for 1 ½-2 hours (may add more water if needed), add 2 pc (peeled & quartered) potatoes, cook until the meat & potatoes are tender. Serve hot with Jamaican ‘Roti’ and enjoy the true taste of Jamaica.
