These green olive colored Fennel Seeds are known as 'Lucknow Sauf", grown primarily in Lucknow, India. These are smaller, crunchier, and much sweeter than regular fennel seeds. Has verygrassy taste, sweet anise flavor with licorice overtones.
Lucknow Fennel seed’s sweet flavor is a common practice to use for pastries, yogurts, honey, fruits, young cheeses, or salads. Grind it with some sugar and make sugar cookies with them. These seeds are also chewed plain as a mouth freshener or digestive.
Kalyustan is my go-to source for spices. I don't know why anyone would bother with Penzey's when they can order from Kalyustan!!!! My only disappointment is that they don't carry Durban-style "Mother-in-Law-Exterminator" curry powder.
