Flageolet Bean

Flageolet beans are small kidney shaped beans, picked before full maturity and dried in the shade to retain its white to very light green color. When cooked, it has mild, firm, unusual creamy texture and delicate taste. Beans are good at absorbing the flavors of the dish. Goes well with lamb and fish, in Cassoulet recipe or in soups, salads.

Basic preparation: Wash, rinse & soak overnight. Add 4 Cups of water / Cup of Bean, bring to boil. Reduce heat and simmer covered for 30 minutes or until tender (add more water as needed). Whisk lightly to remove the floating foam while cooking.

Yield: 2 1/2 cups of cooked beans / Cup of dry beans
