Fructose is a monosaccharide, a form of sugar, naturally found in fruits like berries, apples, dates and figs. Commercially sourced from sugar cane, beets, and corn.

Fructose is sweetest of all sugars, 1.2–1.8 times sweeter than sugar (sucrose). It has lowest glycemic index (25), does not raise blood sugar, has four calories per gram.

Widely used as a sweetener in baking, food, candy, drinks and beverage applications. It improves the taste, texture and shelf life of the food products, holds moisture content and, prevent undesired crystallization.
