Glutinous rice flour is known as sweet flour or waxy rice flour, made from short-grained sweet rice, or sticky rice from Thailand. Ground in traditional water mill, which yields extra fine flour.
It has high amounts of amylopectin, and is responsible for the sticky quality of glutinous rice. Does not contain dietary gluten and should be safe for gluten-free diets.
