Recipe to make Greek Style Stuffed Peppers Wash and Rinse 1 cup medium grain rice, add 2 cups of water, stir in 1 ½ tsp Greek seasoning and cook until rice is tender. Cut around the top of 4 sweet bell peppers and pull out the seeds and membrane. Make a paste of ¼ cup sundried tomato and 2 pc garlic cloves in a food processor. In a large bowl mix together seasoned cooked rice, tomato garlic paste, ½ cup cooked white bean, 3tbsp feta cheese, 4 diced green onion with 2tbsp olive oil, and salt to taste. Put this rice mix into the bell peppers and finish with some feta cheese on the top. Bake the bell peppers until the skins start to shrivel and the feta cheese on top is starting to turn a golden brown. Remove from oven, cool slightly, and sprinkle with toasted pine nuts. Serve warm.
