A very hardy bush bean, ivory color with red marking, renowned for its taste. When cooked maintain a firm texture and have a mild, nutty flavor. Very popular for Spanish, Italian and Portuguese dishes. Used in soups, stews, salads, mixed vegetables and baked beans.
Basic preparation: Wash, rinse & soak overnight. Add 4 Cups of water / Cup of Bean, bring to boil. Reduce heat and simmer covered for 60-90 minutes or until tender (add more water as needed). Whisk lightly to remove the floating foam while cooking.
Yield: 2 1/2 cups of cooked beans / Cup of dry beans
