‘Katchri’ is a wild variety of cucumbers (resembles small brown or yellow melon), grows wildly in the desert areas. Kachri powder acts as good natural meat tenderizer. It can substitute papaya paste in the same ratio.
It gives a tangy taste to kebabs and other traditional dishes, extensively in rural Rajasthani cuisine. Can be used with Curd or water to make Chutney or Spread
To marinade, mix minced lamb, beef or chicken meat together with garlic, ginger, and fresh herbs with Kachri powder (3 tbsp/lb of meat).
