Spice Mix
Khichadi / Khichri Spice Mix is used to prepare a tasty South Asian comfort food called ‘Khichadi /Khichri’ prepared from rice, dal and lentils. Khichadi a rich gourmet delicacy and considered easily digestible, light and healthy dish.
Khichadi / Khichri Spice Mix is also can be added to dals, soups, and vegetable dishes to support a healthy appetite, and promote digestion.
Ingredients
Mustard seed, Cumin, Turmeric, Mineral Salt, Ginger, Cinnamon, Cardamom, Asafetida (hing).
Recipe to make Khichadi (Khichri / খিচুড়ী ) :
Wash 2 cups of ‘Khichadi Rice and lentil mix” and soaked for 30 minutes, Drain, and keep aside. Heat 3tbsp ghee in a large heavy skillet. Stir in 1tbsp ‘Khichadi spice mix’, Add 1tsp ginger paste, 1tsp garlic paste. (Stir in 3-4 Green chilies, finely chopped-optional). Stir-fry for a moment. Add 1 medium chopped onion, Stir-fry for 2 minutes. Add vegetables-optional (2- 3 diced potatoes, 1 diced carrot and 1-2 cup green peas). Add 5 cups of water and salt if needed-to taste. Stir, bring to a boil, cover and simmer till rice and lentils are mushy, sprinkle 1tbsp ghee and garnish with 1tbsp Chopped coriander leaves. Serve piping hot, with Yogurt and chutney.
