Kithul Palm Jaggery
Kithul Jaggery is made of sap harvested from the first flowering of the Kithul palm tree
(Caryota urens) grows in Sri Lankan tropical forests. This kithul sap is boiled in a large vessel to produce thick treacle & set into molds (usually coconut shells), left to harden, resulting in a block of unrefined sugar (jaggary).
Kithul jaggery has unique floral and smoky flavor with a slight hint of caramel. Commonly
used as a sweetener for coffee and tea, as taste enhancer in desserts and sweets. It contains more nutrients and has a lower glycemic index, considered as a healthier than refined sugar.
