(Şiş köfte /Shish kofte)
Kofte / Shish Kofte is a kebab variant in the Turkish and Mughlai cuisine. It consists of minced lamb, mutton or beef, or a mixture of some of these meats, seasoned with spices and grilled on skewers in BBQ grill or Tandoor.
Use approximately 2-4tsp per pound of ground meat
Cumin, Sea Salt, Allspice, Black Pepper, Coriander, Cinnamon, Nutmeg, Paprika, Cloves, Red Chili Pepper
Recipe to prepare Kofte / Shish Kofte Kebab:
In a large bowl, mix 2lbs minced lamb or beef with 2 finely chopped onion, few finely chopped mint leaves, 1 bunch chopped coriander leaves, 1tsp ginger paste Season 2tbsp Kofte Kebab spice mix Cover and refrigerate for 2 hours. Divide the meat mixture into 8 rough balls. Shape into sausages around skewers. Make sure the meat is spread to an even thickness. Refrigerate until you are ready to cook. Preheat barbecue for medium high heat. Brush grate liberally with oil and arrange skewers on barbecue. Grill the kebabs, turning occasionally, until brown all over and just cooked through, about 10 minutes or until well done.6 minutes. Transfer to a serving platter and serve hot with mint, tzatziki sauce and flat bread or lemon slices, onion rings and nan bread.
