The Hen of the Woods Mushrooms AKA 'dancing
mushroom' grow wild in frilly, clustered masses
up to several feet in width, have a light, pleasant
taste and firm- meaty in texture, has a strong
earthy or musty aroma, bold and nutty.
Rehydrated and brushed with oil, they respond
well to roasting and grilling, as well as sautéing.
Makes it a perfect accompaniment for strong
flavors such as smoked foods.
Basic Prep: Rinse and cover with boiling water
and soak for 15-20 min. Rinse well . Or, rinse
add then directly to any recipe that will cook
at least 25 minutes.
