I love to use mushroom powders in place of or in addition to sautéed mushrooms to boost the savory umami flavors in pasta sauces, soups, stews and braises. If I don’t have mushrooms on hand, a generous spoonful is a great short cut. Using a smaller amount will enhance all the flavors in the dish without adding a distinctively mushroom flavor.
