Mannitol is sugar alcohol (polypol), obtained from corn starch. It is 60% as sweet and has 60% fewer calories than sugar ((sucrose) used as a sugar substitute. It water soluble, has moisture-stabilizing properties, doesn’t attract and hold moisture.
Used in the production of baked goods, confectionery, chocolate, coating for hard candies, dried fruits, sugar free products and chewing gums to maintain moisture content & freshness. It has high melting point (165° F ) that prevents browning on baked goods.
Mannitol has a low glycemic index, and can be used as a sweetener for people with diabetes.
