Meat Masala
(for Beef / Mutton/ Lamb)
Mostly used in Indian Cuisine, as a flavoring spice blend, to give the texture, spicy-sweet aroma, and adistinctive tastetonon-veg dishes.
Meat Masala typically used as a marinade, either be rubbed onto pieces of meat as a dry powder mix, or added to cooking oil to make a paste to coat the meat. Use 2-3tbsp Meat Masala for 1 kg of meat.
Ingredients:
Coriander, Cumin, Turmeric, Ginger, Black Pepper, Red Chili, Cinnamon, Nutmeg, Cardamom, Cloves.
Simple recipe to prepare meat curry:
Add 2 tbsp oil to a heated pan, stir fry 1 small chopped onion until soft. Add
1 tbsp ginger & garlic paste , stir, add 2 tbsp ‘Meat Curry Masala’, add little water if needed, stir, add 1lb cut pieces of Meat, and 1 cup diced tomatoes, stir-fry for 5 minutes, add 2 cup of broth or water andsalt to taste. Bring to boil, cover & simmer on low heat (for 35-50 minutes), adding water until the desired thickness of gravy is reached and until the Meat pieces are soft & tender, Garnish with fresh chopped cilantro (coriander) and servesteaming hot.
