Methocel® E4M is "E" Grade, Cold water soluble Hydroxypropyl Methylcellulose, commonly used as a thickener, binder, film former and water retention agent.
Commonly used for fried food oil reduction by forming moisture and oil barriers, adds mouthfeel to low fat foods, creates a semi-firm gel, aids flavor encapsulation, thickens to medium viscosity.
E4M forms a semi firm gel at 58C (136F) - 64C (147F) degrees. It yields viscosity of 4,000 cP at low addition levels.
