Methocel® K100M is "K" Grade Hydroxypropyl Methylcellulose. Cold/hot soluble, thermoreversible soft gelling, very high viscosity refined methylcellulose.
Acts as a general thickener and stabilizer for foods and beverages. Used in processed foods including glazes and sauce performance, dairy and sauce ingredients, freeze/thaw stability, aids low-fat and gluten-free baked goods, aids mouthfeel of low-fat foods.
It forms a soft fluid gel at 158-194°F (70-90°C).It has a very high viscosity of 100,000 Cp
