Millet

Millet is a small, round yellow healthy ancient grain native to Africa and Asia, with a mildly sweet, corn-like flavor. In addition to its great taste, millet packs a healthy punch, easily digestible. Millet absorbs flavors well in a dish.
A great with hearty stews, makes a great pilaf, good companion grain served with rice or corn. Add to muffins, quick breads, pancakes or waffles for a nice crunch. For best results,
toast prior to cooking. Add 1 cup millet to 3 cups of liquid, and simmer for 30 min. If left alone while cooking, it produces fluffy grains.
One cup dry yield 3 cups cooked.
